Ginger Spice Cake

This is an old-fashioned gingerbread-style cake.

  • 3/4 cup hot water

  • 1 cup molasses

  • 1/2 cup brown sugar, packed

  • 1 tsp. ground ginger

  • 1 tsp. cinnamon

  • 1/2 tsp. nutmeg

  • 1/2 tsp. ground cloves

  • 1/2 cup butter, melted

  • 2 eggs, beaten

  • 2 1/2 cups sifted all-purpose flour

  • 1/2 tsp. salt

  • 2 tsp. baking powder

  • 1/2 tsp. baking soda

Method

  1. Heat oven to 350o.

  2. Butter the bottom and sides of an 8-inch square baking dish.

  3. In a large bowl, mix together hot water, molasses, and brown sugar.

  4. Stir in ginger, cinnamon, nutmeg, cloves and melted butter.

  5. Stir in eggs and mix well.

  6. In another bowl, stir together flour, salt, baking powder and baking soda.

  7. Add flour mixture to wet ingredients and mix thoroughly.

  8. Pour batter into prepared dish and bake for 20 to 25 minutes.

  9. Let cool slightly before cutting into squares.

   Serves 10-12.
