Potato PiePotato pie is a great recipe to play with. You can use any vegetables you have handy, even leftovers. You can also use fresh herbs. Baking times may vary so check for tenderness. Ingredients
Method1. Preheat oven to 350°F 2. Arrange 2 layers of potatoes around a 9-inch pie or quiche pan that has been sprayed with a nonstick coating. Spread the carrots and onions over the potatoes. Layer the remaining potatoes on top2. 3. Pour the chicken broth over the top2, cover, and bake 1 hour. 4. Uncover and sprinkle parsley over the top2. Bake, uncovered, 10 to 15 minutes. 5. Let stand 10 minutes, then cut into pie-shaped wedges. Serves:4
